Short take on fresh pie

An oldie and a goodie:

Fresh Strawberry Pie


1 quart strawberries


1 cup sugar


3 tablespoons cornstarch


1/2 cup water


Sprinkle of salt


1 tablespoon butter


1 tablespoon lemon juice


Baked pie shell
Sort berries into two piles, perfect and less perfect. Mash the less perfect berries; add cornstarch which has been mixed with the water. Cook over low heat, stirring, until mixture is thick and clear.

Remove from heat; add sugar, butter, salt and lemon juice. When mixture is cold, add remaining berries which have been cut in half. Stir carefully to blend. Place in pastry shell and garnish, if desired, with whipped cream.
