A Passover specialty

Here's a popular dish during the Passover holiday that begins this week.

Tzimmes


2 cups carrots, cut in thin slices


2 medium yams, grated or sliced thin


1/2 cup unsalted butter or margarine


1/2 teaspoon nutmeg


1/2 cup sugar


1/2 teaspoon salt


1 cup prunes, pitted and drained
Place all ingredients except prunes into a large and heavy pot. Simmer for 45 to 50 minutes; add prunes at about the 30-minute mark. Stir every few minutes.

Remove from heat for 5 minutes before serving. Makes about 8 servings.
