This old recipe produces a slightly sweet, but very tasty main dish. Apricot Chicken Louise
1 chicken, cut in pieces
Salt, pepper and garlic powder to taste
1/2 jar apricot jam
1 to 2 teaspoons soy sauce
Dash of worcestershire sauce
Season chicken well and place in baking pan. Put remaining ingredients in a saucepan, mix well and simmer for a few minutes. Spoon sauce generously over chicken.
Place pan, uncovered in a preheated 425-degree oven for 10 minutes. Lower the heat to 325 degrees and bake for about 45 more minutes or until the chicken is crisp and well done. Baste once or twice during the cooking but don't turn the chicken. Makes 4 servings.
