A quick breakfast treat

Now that the kids are all back in school and daily breakfasts need to be quick and easy to prepare, this easy-to-make broiled toast is hard to beat. You can even prepare it the night before, cover it tightly and refrigerate it until you're ready to broil it. I have called for whole-grain bread because it offers the maximum amount of fiber.
BANANA CINNAMON TOAST

4 slices whole-grain bread, toasted
1/2 cup low-fat ricotta cheese
1 medium-size banana, peeled and sliced
Ground cinnamon
Preheat the broiler oven. Spread each piece of toasted bread with two tablespoons of the cheese.

Arrange the sliced banana on top of the cheese and sprinkle with ground cinnamon.

Place on a baking sheet or broiler pan and broil until the banana starts to bubble and lightly brown. Makes 4 servings.

Each serving contains approximately: 115 calories; 3 grams fat; 9 mg cholesterol; 125 mg sodium; 17 grams carbohydrates; 6 grams protein; 1 gram fiber.
